“More than just a distillery” – Ian Macleod opens Edinburgh Gin at The Arches and visitor centre
The distillery underscores the brand’s dedication to producing high-quality gin sustainably while preserving Edinburgh’s heritage.
Ian Macleod Distillers has officially unveiled The Edinburgh Gin Distillery at The Arches and visitor experience on East Market Street, Edinburgh.
Built on the site of the historic Trinity Church, the facility blends heritage with innovation to celebrate the craft of gin-making.
As reported, the distillery serves as the inspiration for Edinburgh Gin’s presence at Avolta’s recently refurbished World Duty Free store at Edinburgh Airport.
The distillery preserves the site’s architectural legacy, retaining features such as original arches and exposed brickwork while introducing modern additions.
Highlights include floor-to-ceiling windows offering panoramic views of Edinburgh’s skyline, a roof terrace and a contemporary bar.
It is also home to two bespoke 2,000-litre copper stills named Annie and Lina.
These stills pay homage to gardeners Annie and Lina, two of the first women to tend the Royal Botanic Garden Edinburgh in 1897. A smaller still, Matilda, is dedicated to experimental distillation.
Positioned as a hub for gin culture in Edinburgh, the opening marries premium gin production with immersive visitor experiences. Guests can explore the rich history of gin distillation while enjoying views of the city and learning about the craftsmanship behind each bottle.
Sustainability is central to the new facility’s operations. The distillery is powered entirely by renewable electricity, making it operationally carbon neutral and building on Edinburgh Gin’s broader eco-conscious efforts. The brand has incorporated 49% recycled glass in its packaging, recyclable labels and the elimination of secondary packaging across its core range.
